Cocina de AutorCocina de Autor is a creative cuisine restaurant in constant evolution, seeking to evoke new sensations and emotions through its food and service to our customers. We are constantly adapting our techniques and creativity to our surroundings; in this case, the Mexican Caribbean. The tasting menu is the maximum expression of avante garde food.
Molecular food exists for more than 20 years, and it refers to the movement created by "scientists". Their goal was to gather cooks to try to understand traditional food through physiscs and try to comprehend the changes food suffers. Thanks to this, some cooks began to develop modern techniques and textures to get to new results through food, this is actually known as vanguard food or tecnoemotional food.
Our cuisine is guided by four principles:
Identity. Over the years Chef Bruno Oteiza and Chef Mikel Alonso have each developed our own cuisine. Today both personalities come together as one person, Chef Xavier, to achieve what we know as Cocina de Autor, or our Signature Restaurant.
Technique and Technology. Classic and modern culinary techniques form the heritage of our work in Cocina de Autor and we are always in an incessant quest for new techniques. New technologies are the support for culinary progress.
Product.We are spontaneous cuisine, fresh, market cuisine, vanguard cuisine; in other words, we use the best product with the best technique with the sole purpose of pleasing our customers.
Liberty.This is one of the most strategic points in our cuisine but at the same time it is subtle. Despite our classic formation, we respect the evolution of cuisine. In other words, many times we bend tradition if the final result is improved, and have the confidence to be adventurous in the present.

Cocina de Autor has been recently named one of the "100 Best New Food & Drink Experiences"in the world by Food & Wine magazine.
Cocina de Autor is open daily from 6pm to 11pm. Reservations are required. All restaurant seating is in the air-conditioned dining room. Cocina de Autor is a non-smoking restaurant.
