Chef Nahúm Velasco
Originally from Mexico City, Chef Nahúm Velasco’s passion for gastronomy was ignited in his family's kitchen. At 17, he formalized his training at the Ambrosia Culinary Center before embarking on an international journey that would define his avant-garde style. His career led him to Spain and later to Copenhagen, where he honed his craft under the legendary Chef Rasmus Kofoed at the three-MICHELIN-starred Geranium.
Upon returning to Latin America, Chef Velasco joined the opening team of Cocina de Autor at Grand Velas Riviera Maya. After refining his expertise at Passion by Martin Berasategui in Punta Cana, he was personally invited back by consulting chefs Mikel Alonso and Bruno Oteiza to co-lead Cocina de Autor as Executive Chef in 2024. Under his leadership, the restaurant was awarded its first MICHELIN Star during the guide’s inaugural year in Mexico. In 2025, Cocina de Autor not only retained its star but also received the prestigious MICHELIN Guide Service Award, a testament to Velasco’s dedication to blending world-class fine dining with heartfelt hospitality.
Crescenciano Nerey Encarnación
With over three decades of experience in the luxury hospitality industry, Chef Crescenciano Nerey brings an extraordinary depth of knowledge to Grand Velas Riviera Maya. His career is distinguished by his expertise in large-scale gastronomic operations and his leadership in opening teams for some of Mexico’s most prestigious properties.
Chef Nerey’s history with the Grand Velas brand is profound; he served as Executive Sous Chef at Grand Velas Riviera Nayarit and was an integral part of the original opening team for Grand Velas Riviera Maya in 2008. Throughout his tenure, he has been instrumental in securing and maintaining numerous AAA Four- and Five-Diamond Awards. An active member of the prestigious Les Toques Blanches, Chef Nerey is recognized for his mastery of kitchen management and his unwavering focus on quality, consistency, and the mentorship of new culinary talent.
