This is casual French dining redefined. Enjoy Bistro's breakfast menu filled with offerings like French toast, omelettes, and Playa del Carmen style eggs. Dedicated to gastronomy for over 14 years, Chef Balam's education began at the Colegio Nacional de Educación Profesional Técnica. From 2004 to 2007, he worked at the Grand Oasis Cancun hotel as a kitchen supplier, where he gained profound experience in the department. He then spent time learning from Chef Bruno Pascal Paragot, working daily by his side, before exploring Asian cuisine under the leadership of Chef Mario Burgos.
In 2010 he joined Secrets Capri, where he won first place in a fruit and vegetable carving competition held among the hotels of the chain. He spent three years in charge of the steakhouse restaurant Seaside.
He began working for Grand Velas Riviera Maya in 2013, in the banquet kitchens and restaurant Azul. Today, he is Chef de Cuisine of restaurant Bistro, where he transmit his passion and joy in every dish.
